Eris’ Fruit Soup

Don't judge me.
INGREDIENTS

16 oz frozen sliced strawberries in syrup

about 6-8 oz frozen blueberries

Can of pineapple chunks

3 kiwis, peeled and sliced into half-moon chunks

whatever fresh fruit you have laying around that you wanna use up (like oranges or apples or grapes)

DIRECTIONS:

Get you a big ass bowl with a lid. Like, a pasta salad kind of bowl. Defrost the strawberries in the fridge and then pour them babies into said bowl. Add in the blueberries (frozen, because like, have you ever defrosted blueberries? THE BLUE STUFF WILL STAIN YOUR SOUL and also your countertops). Add in your pineapple, your kiwis, and whatever other chunks of fruit you want. IF you like banana you can add banana but like, why?*

Stick it back into the fridge for a good hour or so to let the blueberries unfreeze and for all the juices and flavors to meld with the dragon--i mean soup.

Eat. Enjoy.

Okay, okay, some context: This is a family recipe. It's been pretty well distorted since my grandmother and great-grandmother made it to be more pantry/freezer friendly. If I remember right, they actually did some cooking? of the fruit? so it's kind of a fruity jammy sort of soup? I dunno.

Since it's very much soupy and not salady, you can serve this on icecream or cake or even mix it in a clear alcohol like vodka and drink it like a very fancy (and slightly chunky) cocktail.

But I legit just eat it with a spoon. It's fantastic in the summertime when it's 110 outside and your body is threatening to liquify and spill down the sewage drains.

Eris’ Pumpkin Apple Streusel Muffins

INGREDIENTS:

Muffin part

2 1/2 cups flour

2 cups sugar

1 tablespoon pumpkin pie spice

1 teaspoon baking soda

1/2 teaspoon salt

1 1/4 cups pumpkin puree

2 large eggs

1/4 cup vegetable oil

2 cups apples, peeled, cored and finely chopped

Streusel part

2 tbsp flour

1/4 cup sugar

1/2 tsp cinnamon

2 tbsp butter

DIRECTIONS:

Preheat oven to 350º F. Line 2 dozen muffin tins with baking cups.

Combine the dry ingredients for the muffins (flour,sugar, pumpkin pie spice, baking soda and salt) in large bowl. Then get your wet stuff into another bowl--pumpkin, eggs and oil (NOT THE APPLES. HOLD YOUR APPLE HORSES)--and stir that up well. Mix wet stuff into dry stuff until moistened.

NOW you can add in the apples. Carefully eyeball the batter into into your muffin cups about 3/4 of the way full; wonder about 8-12 muffins in if you have any ability to estimate spacial-volume dimensions by sight.

NOW THE STRUESEL

Combine remaining 1/4 cup sugar, remaining 2 tablespoons flour and cinnamon in medium bowl. Cut in butter until mixture is crumbly. Sprinkle over muffin batter. Try not to eat it directly off your fingers. You should probably wash your hands now.

Bake for 30-35 minutes or until toothpick comes out clean. Cool in pans for another 5 minutes; then plop those babies out onto a wire rack to cool just enough that they don't burn your mouth when you inhale like, 3 of them at once.

#Drop It Like It's Guac

Ingredients

2 large or 3 smallish avocados

1 small red onion chopped

2-3 tomatos, chopped

Juice of 1 entire lime, freshly squeezed

1/2 - 1 cup greek yogurt

Salt and pepper to taste

Optional: diced jalapeno, habenero, or other type of spicy pepper, if you want heat

Directions

Cleeve the avocados in half and take out the pits. Set the puts aside. Scoop out the green flesh and put into your bowl, smashing it lightly.

Add in red onion, tomato, and peppers (if you're adding them), then add half a cup of greek yogurt and begin to mix together. For more fluffy, creamy guacamole, add in more greek yogurt. Squeeze an entire lime into the mix, and salt and pepper liberally.

TIP FROM MR. MAC: now thst your guac is finished, hollow out a space in the bowl, add the pits back in, and recover with guacamole. This should keep the avocado from browning too quickly!

Eris’ Chili Nachos!!!

For chili with beans:

1lb ground beef

16 oz pork and beans

16 oz petite diced tomatos

1/4 cup bbq sauce

1/2 tblspn worchestershire

3 tblspn chilli powder

1 tsp onion powder

1/2 tsp garlic powder

Vigorous salt and pepper

For chilli without beans

2 lbs ground beef

16oz diced tomatos

6 oz tomato sauce

1/4 cup bbq sauce

3 tblsn chilli powder

1 tsp onion powder

1/2 tsp garlic powder

Vigorous salt and pepper

Directions

Brown your ground beef with the spices. Add your beans and/or your tomatos, add in various sauces. Stir occassionally until chili is pungent and slightly bubbling. Spice to taste.

Assembly:

Preheat oven 350 degrees. On a large rimmed baking sheet, spread a layer of either corn or tortilla chips (your preference). Top with chilli and shredded cheese (from a block of cheese that you shred, not the pre-shredded kind!!) Bake in oven for 10-12 minutes or until cheese is melted and slightly crisp around the edges.

Serve with your choice of guacamole, salsa, chopped veggies, and sour cream.

Revolting Awesome Chocolate Cake*

INGREDIENTS

2 cups white sugar

1 3/4 cups flour

3/4 cup good cocoa powder

1 1/2 tsp baking soda

1 tsp salt

2 eggs

1 cup milk

1/2 cup vegetable oil

1 cup BOILING water

DIRECTIONS

Preheat your oven to 350F. Combine dry ingredients, and then add in wet ingredients EXCEPT for the boiling water into the bowl. Stir well or beat with a mixer on medium speed for 2 minutes, until batter is smooth. NOW, now pour in your boiling water into the batter and stir it in. The batter should darken and deepen in color and also start to smell REALLY GOOD. (Don't eat it yet, you've got raw flour and eggs in there. Don't get sick.)

Grease two 8" round cake pans (or a sheet pan whatever I'm not your mom) and pour your batter into them in equal amounts. Bake for 30-35 minutes until completely done in the center via toothpick test.

Cool on a wire rack, then ice and decorate with your favorite icings/fillings.

Store under a cake dish on the counter for up to 4 days OR in the fridge for... honestly I tend to eat this thing kind of immediately so I don't really know, so like a week? Sounds great. Store for a week.

IF YOU WANT CUPCAKES--- follow all the above directions, except pour the batter into 24 paper cups and bake for 15 to 18 minutes. And heck yes it does make 2 dozen cupcakes. GO FORTH AND CAKE Y'ALL.

Omg Cinnamon Apples Round up as much as you have room in your pan for: Ingredients: 1 (or more) green, granny smith apples, or other very tart, crisp apple of your choosing, cored and cut into equal 1/16 slices 1/3 cup brown sugar 1 Tblspn of cinnamon 1/2 stick of butter Directions In a large skillet, melt your butter. In a bowl or bag, mix your apple slices, brown sugar and cinnamon until slices are evenly coated. Cook in hot melted butter until soft and sticky, approximately 12-18 minutes.

Eris’ leftover cornbread breakfast casserole

Ingredients

4 cups (or whatever) cubed cornbread

16 oz bulk breakfast sausage

6 eggs

2 cups of milk

1-3 cups of shredded cheddar cheese (you control the amount, i'm not your mom)

Salt and pepper

Directions:

Preheat oven to 375 degrees. Cook your sausage (if not already cooked). In a well greased 9"x13" glass dish, layer cornbread, then sausage. Mix eggs and milk together until smooth and even, then pour mixture over sausage. Top with cheddar cheese. Bake for 20 minutes or until cheese is melted and egg is cooked through.

Lasts in fridge for up to 4 days, or frozen for 3-4 weeks. (Tip: freeze in squares, and defrost in microwave for 90 seconds and then on high for 1 minute in order to reheat)

The same recipe can be used to make 2 dozen breakfast muffins: line a muffin tin with baking cups and layer like above, then bake for around 7 minutes until melted and cooked through.

Eris's FOOD CRIME No-Bake Cookies

Ingredients

1 3/4 cup sugar
1/2 cup milk
1 stick (8 tbsp) butter
1/4 cup unsweetened cocoa powder
3 cups old-fashion (for a bite-y cookie) or quick oats (for a chewier cookie)
1 to 1 1/2 cups coconut flakes
1 tbsp vanilla extract
a pinch of salt

Directions

Prepare a baking sheet with parchment or wax paper.

In a medium saucepan, combine the sugar, milk, butter, and cocoa and bring to a boil. When it is bubbling at the edges, stir constantly to keep the milk from charring for 1 minute, then remove from heat.

Add in the oats and coconut, combine, then add in the vanilla and salt and mix thoroughly.

Drop into flattened balls (I like large, golfball sized cookies, but you do you, fam) onto the baking sheet, and rest them on the countertop for about 15 minutes before setting them into freezer for about another hour, until frozen solid. (Or, if you're like me, for as reasonably long as you can stand it, so like, 20 minutes).

Munch and gnaw on your frozen cookie goodness.

Much More Palatable No-Bake Cookies

Same as above but substitute the coconut for 1 cup smooth peanut butter (NOT CHUNKY) and a dash of cinnamon with the vanilla. You cowards.

Eris's Penne Penny Chili

Ingredients

1 lb ground beef

16 oz can of diced tomatoes

16 oz can of pork and beans

12-14oz penne pasta

3 cups of water

Onion, diced (optional)

Cheddar cheese (optional)

Directions

Brown the meat. If you're adding an onion, do so now or just after the meat starts browning so that both meat and onion finish together. Add in a can of diced tomatoes and a can of pork and beans, then 3 cups of water, and about 12-14 oz of penne pasta. Turn up the heat until just shy of boiling, and cook with lid on for 15 minutes until noodles are soft. Serve with grated cheddar cheese and corn bread if you've got any.

Eris's Sort Of Almost Colcannon

INGREDIENTS

12-16 oz polish sausage, kielbasa, or other preferred sausage, cut into 1/2" medallions

1 head green cabbage, roughly chopped

1 yellow or sweet onion, chopped

2 lbs gold potatoes, quartered for faster cooking time

Splash of milk or cream

Salt and pepper

Irish butter (for topping)

DIRECTIONS

Start by boiling your gold potatoes. While waiting for them to cook, fry up your bite-sized sausage medallions in a medium-hot pan. If your sausage is pre-cooked, go ahead and add your chopped onion in now (if not, give your protein some time to cook through before you add in your chopped onion). Season with salt and pepper, and cook until onion is translucent and sausage is fragrant. Add in the cabbage, and cook for a few minutes longer, frequently stirring and flipping so it doesn't burn, until cabbage is bright green and shiny.

Once potatoes are soft, drain them, then season with salt and pepper and a splash of milk and butter. Mash until chunky. Serve alongside cabbage and sausage mix and top with a fat pat of irish butter.

Eris’ Biscuits and Sausage Gravy:

INGREDIENTS:

Canned Biscuit Dough

1 lb sausage

24-32 oz heavy cream, half and half, or whole milk

1-2 cups flour

1 tablespoon chilli powder

1 tablespoon black pepper

Salt and pepper to taste

(Optional: 1/2 teaspoon paprika

DIRECTIONS:

Go ahead and start preheating the oven for your biscuits. If you’re going to make your own, make them now. But I’ll be honest, I used canned.

In a medium to high heated up large skillet, brown the sausage with a dash of salt and pepper and chili powder. If you want a SPICY GRAVY add the paprika and red pepper flakes.

Once the meat is browned, add in a tablespoon or two of flour and coat the sausage with it. Once coated (you can tell because the sausage gets a sort of… softness to it, because the flour soaks up the fat and adheres to the meat), turn down the heat to medium and add in several cups of whole milk or heavy cream or half and half or whatever kind of fatty milk you’ve got. Yes, it has to have fat in it. No, you cannot use 2%, trust me. This is better. Go on a walk later if you’re worried about it. Add as much milk as you would like gravy.

Then, a quarter of a cup at a time, add flour. Whisk thoroughly between each addition. At about a whole cup of flour stop (or sooner, if it starts to get thick) let it go on about medium heat, stirring infrequently to keep the milk from scouring. After about 7 to 8 minutes or so, it should get REAL THICC. Add in the black pepper and stir it in.

Serve on top of split biscuits.

An Old Friend For Dinner: The Silence of the Lambs (1991)

This is a very, very good movie, and if you haven’t seen it yet, I’m not sure how you came to find us. But, as the doors clang shut, prepare to hear Eris and Mac’s thoughts on the thing without which there would be no Hannibal Lecter franchise!

Eris’ Bastardized Burek-esque not-Lasagna!

INGREDIENTS:

1 can crescent roll dough

1 lb ground beef*

1 medium vidalia or yellow onion, chopped

1/2 green cabbage, choppped

1-2 tbspn chili powder

1-2 tsp paprika

Salt & pepper

4 tbspn melted butter

Sprinkles of oregano

INSTRUCTIONS:

Preheat the oven according to instructions on crescent roll package. In an 8×8 glass pan, lay out 4 "rolls" of dough, enough to cover the bottom of the pan. (You may have to stretch the dough to fit). Bake according to the instructions on the package--save the other half of the dough for later.

In a large skillet, brown the meat on medium heat  Add chili powder and paprika and salt&pepper in with the meat. Once cooked, set meat aside in separate dish. In the same pan, cook the onion until mostly cooked through, then add the cabbage. Salt and pepper onion and cabbage, and cook until cabbage is bright green and much reduced.

On the now baked thoroughly layer of roll dough, layer the cabbage and onion, then the meat, then the raw leftover dough from earlier. Bake in the oven again for approximately 11 minutes. Take out, drizzle melted butter and oregano over the top of the dish and put back in the oven for another 3-5 minutes until top is golden brown and crispy.

Serve with sour cream or greek yogurt.

*However you interrupt "Chuck" is up to you. Ground Chuck? Grounded flesh of man named Chuck? Even Ground Turkey works in this dish! Chili is very versatile and forgiving. :)

Eris’s Not Quite Authentic Southern Chili!

INGREDIENTS:

1.5-2 lbs ground meat. (Chuck is good.)*

1 large vidalia onion, chopped

2 16oz cans pork and beans

1 16oz can kidney beans

1 16oz can black beans

1 16oz can diced tomatoes (or stewed tomatoes)

1 cup bbq sauce

2-4 tblspn chili powder

1/4 cup minced garlic

(Optional ingredients, add to your taste!)

Cumin, paprika, allspice, powdered cocoa/chocolate, red pepper flakes, salt & pepper to taste.

1 cup frozen corn

1-2 chopped bell peppers

INSTRUCTIONS:

Start by browning the meat and onion in a large chili pot on medium/high heat until cooked through. Lightly smash the 2 cans of pork and beans to create a paste and add to the pot. Add the kidney beans and black beans and the can of tomatoes. Add bbq sauce, spices, garlic, and optional ingredients to taste. Simmer on low heat for 20-30 minutes, until flavors are blended through. Keep refrigerated, and reheat on the stove for a wonderful leftover meal! Serving ontop cornbread is highly recommended.

We Hope You Won't Be Very Ugly: Red Dragon (2002)

We need to talk about Mrs. Doubtfire. Like, buckle up, because a fouth of this podcast episode, ostensibly about Red Dragon (2002), is going to be about Mrs. Doubtfire. Don’t worry, it will all make sense in the end. Well, not sense but we didn’t just pull the topic out of nowhere. Also, Mac and Eris marvel a bit that a Brett Ratner-directed Hannibal Lecter movie isn’t a complete disaster, although who needs a Marvel-style tag scene after all that?

Eris’s Chicken and Goat Cheese Cranberry Salad!

INGREDIENTS:

1/2 lb chicken breast (1 breast)

1/4 cup Italian dressing

Oregano

Salt & Pepper

Salad:

5 oz baby spinach

1/4 cup red onion, diced

1/2 cup dried cranberries (craisins!)

1/3 cup candied pecans

5-6 oz goat cheese medallions

Sliced Chicken

Balsamic Glaze

INSTRUCTIONS:

Marinate the chicken in Italian dressing for 2-4 hours in fridge. Preheat oven to 420 degrees, dress chicken with salt & pepper and oregano, and then bake for 30-35 minutes until cooked through. Cool, then slice.

To make the salad, build a bed with spinach, then layer onion, cranberries, goat cheese medallions, and sliced chicken. Top with candied pecans and drizzle balsamic glaze in a pleasing pattern on top (I like checkerboard). Serves 2.

Eris’s Barbecue Pulled Chicken!

INGREDIENTS:

2 lbs chicken breast (2-3 breasts)

1 cup barbecue sauce (I use Sweet Baby Rays, but y’all do what you want)

1/2 cup peach preserves

Splash of white vinegar

1/4-1/2 tbsp chili powder (measure with your heart!)

Dash of salt & pepper

INSTRUCTIONS:

In a medium sized crockpot, mix the BBQ sauce, peach preserves, and vinegar together first into smooth sauce. Coat the chicken liberally with chili powder, salt & pepper and add to the crockpot. Smother the chicken in the sauce.

Cook on low for 6 hours or high for 4. Check to make sure cooked throughly. Shred with a fork.

Serve on hamburger buns or on top of rice. Serves 4-6.

Eris’s Beef Stroganoff!

INGREDIENTS:

1.5-2 lbs flank steak (cut into 1 inch chunks) or beef stew tips (or human thigh if you’re thrifty!)

1 Yellow onion, roughly chopped

16 oz tomato purée

16 oz water

1/4 cup chili powder

1/4 cup paprika

Worcestershire sauce

1 cup Greek yogurt

(Optional) bouillon cube

3 cups egg noodles 

DIRECTIONS:

Start by browning the meat, season liberally with salt and pepper. Set the meat aside.

Brown the onion in the same pan.

Add in the tomato purée, water, chili powder, and paprika and mix thoroughly. Add back in the meat and add Worcestershire sauce (and other seasoning ingredients to taste) and simmer while cooking the egg noodles according to package directions (approximately 11 to 15 minutes, depending on how long it takes to boil  the water).

Turn the heat to low and add in the cup of Greek yogurt and stir thoroughly. Cook for an additional minute.

Serve over egg noodles.
