Shallow Rollers and Deep Rollers: Hannibal (2001)

Jack Crawford and the pencil lickers at Behavioral Science have deigned to send trainees to test us, as Donna and Kenzi from Beyond the Cabin In the Woods have joined us to discuss Ridley Scott’s unenviable task to create a sequel to the film Silence of the Lambs. Eris's Sort Of Almost Colcannon

INGREDIENTS

12-16 oz polish sausage, kielbasa, or other preferred sausage, cut into 1/2" medallions

1 head green cabbage, roughly chopped

1 yellow or sweet onion, chopped

2 lbs gold potatoes, quartered for faster cooking time

Splash of milk or cream

Salt and pepper

Irish butter (for topping)

DIRECTIONS

Start by boiling your gold potatoes. While waiting for them to cook, fry up your bite-sized sausage medallions in a medium-hot pan. If your sausage is pre-cooked, go ahead and add your chopped onion in now (if not, give your protein some time to cook through before you add in your chopped onion). Season with salt and pepper, and cook until onion is translucent and sausage is fragrant. Add in the cabbage, and cook for a few minutes longer, frequently stirring and flipping so it doesn't burn, until cabbage is bright green and shiny.

Once potatoes are soft, drain them, then season with salt and pepper and a splash of milk and butter. Mash until chunky. Serve alongside cabbage and sausage mix and top with a fat pat of irish butter.
